TIGER NUT
Cyperus esculentus is a crop of the sedge family which is mostly found in Southern Europe, Africa and Indian subcontinent. Tiger nut also known as ‘Chufa’ has a sweet and nutty taste. It is classified as a tuber crop even though it grows like grass. In Nigeria, they are popular in states like Sokoto, Taraba, Kano and Plateau.

Derivatives of tiger nuts includes tiger nut flour which are used in baking as its gluten free. Also tiger nut milk which serves as an alternative to dairy milk.

USES
Tiger nuts are used for cooking and serves as flavourings, the extracted oil is used in cosmetic based product, and also has an application in the pharmaceutical industry. Tiger nut is believed to act as an antioxidant as it is high in vitamin E and oleic acid. Helps in the control of diabetes and lower bad cholesterol level.
Its colour varieties are yellow and brown. Dried tiger nut is resistant to microbial spoilage and drying also help to preserve its nutritional qualities.
